I had this issue too. I pretty much went through all the same steps you did and I scoured the internet looking for an answer to no available. I only figured it out by chance, right as my patience was coming to an end. The solution is simple, but it's not obvious.
Follow the instructions on the following page to properly set up your XP-630 with Epson drivers. Basically, it's not a matter of just downloading the driver (who knew?). You have to actually delete and manually re-add the printer from Apple settings, where you can select the driver instead of AirPrint.

Then—and this is what I was hung up on for like an hour—the printer will disappear entirely as an option in Print CD. You have to select 'Update Printer Information' from the file menu. It never occurred to me to look there; I just happened upon it by accident.
